Rarely have I met anyone who doesn't like chocolate. Or mousse. Or moose. No wait, moose are kind of scary. Anyways: the point is, chocolate mousse is awesome. You know what's not awesome? Sugar. Sure it's okay in moderation but once I started eating cleaner I noticed sugar upset my stomach quite a bit. So how did I get my dose of YUM without the discomfort? Well here ya go folks, behold! Raw Vegan Chocolate Mousse
1 ripe avocado
1/2 can of coconut milk
2-3 tbsp of cacao powder
3-4 tbsp of maple syrup, coconut sugar, honey (for the beegans,) or sweetener of choice
Combine all ingredients in a blender or food processor and mix.
Go crazy with toppings! I did some dark chocolate chips, strawberries, raspberries and almonds. Nicole suggested goji berries, coconut shreds, cacao nibs, cinnamon, chili pepper, chopped nuts, frozen berries.
I've even included a layer of this over my overnight oats in the morning!
